I have 5 years of work experience but don’t have much stuff to count on as achievements other than meeting all the targets on time with perfection. How to reply this question with confidence?

Confidence comes from within. When the candidate is convinced of his own achievements, then his reply automatically comes up with confidence. It is a talent to frame a sensible reply, a skill that the interviewer looks for in any candidate.
Achievement is not a special criteria that every individual attains in the career. Completion of a self-regulated project or leading a team or heading any assignment is not the only achievement. Meeting targets, completing the given tasks within time-frame, getting small and big words of appreciation from the management, co-employees, clients or customers (for those dealing with the customers directly) are all the part of achievement. It is how the candidate frames these achievements in their words to convince the interviewer.
